The Soul-Warming Vietnamese Pho Bo

Pho Bo is a traditional Vietnamese soup known for its delicate broth, tender rice noodles, and aromatic herbs. This dish originated in Northern Vietnam in the early 20th century and has since become a beloved staple in Vietnamese cuisine.

Ingredients:

  • 2 liters beef stock
  • 500g beef brisket, thinly sliced
  • 300g rice noodles

  • 2 cinnamon sticks
  • 3 cloves
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • Salt and pepper, to taste

  • Bean sprouts, lime wedges, and chili slices for serving

Instructions:

  1. In a pot, char the onion and ginger until slightly blackened. Add the beef stock, garlic, star anise, cinnamon, cloves, fish sauce, sugar, salt, and pepper. Bring to a boil, then simmer for 1-2 hours.
  2. Cook the rice noodles according to package instructions, then drain and set aside.
  3. Blanch the bean sprouts in hot water for 1 minute, then drain.
  4. To serve, divide the cooked noodles among bowls, top with raw beef slices, and pour the hot broth over the beef. The heat of the broth will cook the beef slices.
  5. Garnish with fresh herbs, bean sprouts, lime wedges, and chili slices. Enjoy your comforting bowl of Vietnamese Pho Bo!
