Ingredients:
- 1 litre of skim milk
- 1/4 cup of live bacterial culture yogurt
Instructions:
- Heat the skim milk in a saucepan over medium heat until it reaches 85°C, stirring occasionally to prevent scorching.
- Cool the milk to 43°C and then stir in the live bacterial culture yogurt.
- Cover the mixture with a clean cloth and let it sit at room temperature for 4-6 hours to allow the Skyr to thicken.
- Once thickened, transfer the Skyr to a cheesecloth-lined strainer set over a bowl. Let it strain in the fridge for 8-12 hours to remove excess liquid.
