Jamaican Jerk Chicken

  • 1 tablespoon brown sugar

Instructions:

  1. In a food processor, combine the scallions, garlic, Scotch bonnet peppers, thyme, allspice, sugar, salt, pepper, soy sauce, oil, and vinegar. Blend until smooth to make the marinade.
  2. Place the chicken pieces in a large bowl and pour the marinade over the chicken. Rub the marinade into the chicken, making sure each piece is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the chicken is cooked through and has a nice char.
