Experience the Flavors of Jordan with Authentic Jordanian Mansaf

Originating from the heart of Jordan, Mansaf is a traditional dish that holds a special place in Jordanian cuisine. This iconic dish is typically made with lamb cooked in a sauce of fermented dried yogurt, usually served with rice and topped with pine nuts and almonds. Today, I am excited to share with you my take on the classic Jordanian Mansaf recipe. Let's embark on a culinary journey to Jordan and savor the exquisite taste of this beloved dish together!

Ingredients:

  • 1 kg lamb, cut into large chunks
  • 500g Greek yogurt
  • 1 onion, finely chopped
  • 1/2 cup pine nuts
  • 1/2 cup slivered almonds
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 4 cups cooked rice, to serve
  • Fresh parsley, for garnish

Instructions:

  1. In a large pot, brown the lamb chunks on all sides. Add water to cover the meat, bring to a boil, then reduce the heat and let it simmer until the meat is tender.
  2. In a separate bowl, mix the Greek yogurt with some of the cooking liquid from the lamb to form a sauce. Add the turmeric, cumin, cinnamon, salt, and pepper to the sauce.
  3. Add the yogurt sauce to the lamb in the pot and simmer for another 10-15 minutes.
  4. Toast the pine nuts and almonds in a separate pan until golden.
  5. Once the lamb is cooked through and the sauce has thickened, serve the Mansaf on a large platter over a bed of rice.
  6. Top the Mansaf with the toasted pine nuts and almonds, chopped parsley, and serve hot.
