The French Classic: Ratatouille

Originating from Nice, France, Ratatouille is a classic vegetable stew that celebrates the vibrant flavors of summer produce. This hearty and comforting dish is a staple in French cuisine, known for its colorful and nutritious ingredients.

Traditionally made with zucchini, eggplant, bell peppers, onions, tomatoes, and fragrant herbs like thyme and basil, Ratatouille is a versatile dish that can be enjoyed on its own, with crusty bread, or as a side to protein like fish or chicken. It's a perfect way to enjoy an abundance of fresh vegetables in a delicious and satisfying way.

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 eggplant, diced
  • 2 zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 4 ripe tomatoes, chopped
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper, to taste

Instructions:

  1. In a large pan, heat the olive oil over medium heat. Add the sliced onion and minced garlic, and sauté until fragrant.
  2. Add the diced eggplant, sliced zucchinis, and sliced bell peppers to the pan. Cook until the vegetables are slightly softened.
  3. Stir in the chopped tomatoes, dried thyme, dried basil, salt, and pepper. Cover the pan and let the Ratatouille simmer for about 20-25 minutes, stirring occasionally.
  4. Once the vegetables are tender and the flavors have melded together, adjust seasoning if needed and serve the Ratatouille hot.
