The Origin of Tacos al Pastor
Tacos al Pastor is a popular street food in Mexico with Middle Eastern influences. The dish originated in central Mexico, where Lebanese immigrants brought the concept of spit-grilled meat. Over time, it evolved into the delicious and unique dish we know today.
Recipe: Mexican Tacos al Pastor
Ingredients:
- 500g thinly sliced pork shoulder
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 dried guajillo chilies, rehydrated
- 1 tsp achiote paste
- 1 tsp dried oregano
- 1/2 tsp cumin
- 1/4 cup white vinegar
- Salt and pepper to taste
- Corn tortillas, diced pineapple, chopped onion, and fresh coriander (for serving)
Instructions:
- In a blender, combine the chopped onion, garlic, rehydrated guajillo chilies, achiote paste, oregano, cumin, vinegar, salt, and pepper. Blend until smooth to create the marinade.
- Place the pork slices in a dish and cover with the marinade. Refrigerate for at least 4 hours or overnight.
- Preheat the grill or oven to medium-high heat. Thread the marinated pork onto skewers and grill for about 5-7 minutes on each side until cooked through.
- Remove the pork from the skewers and chop into smaller pieces.
- Heat the corn tortillas and assemble the tacos with the chopped pork, diced pineapple, chopped onion, and fresh coriander.
