The Origin of Tacos al Pastor

Tacos al Pastor is a popular street food in Mexico with Middle Eastern influences. The dish originated in central Mexico, where Lebanese immigrants brought the concept of spit-grilled meat. Over time, it evolved into the delicious and unique dish we know today.

Recipe: Mexican Tacos al Pastor

Ingredients:

  • 500g thinly sliced pork shoulder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 dried guajillo chilies, rehydrated
  • 1 tsp achiote paste
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • 1/4 cup white vinegar
  • Salt and pepper to taste
  • Corn tortillas, diced pineapple, chopped onion, and fresh coriander (for serving)

Instructions:

  1. In a blender, combine the chopped onion, garlic, rehydrated guajillo chilies, achiote paste, oregano, cumin, vinegar, salt, and pepper. Blend until smooth to create the marinade.
  2. Place the pork slices in a dish and cover with the marinade. Refrigerate for at least 4 hours or overnight.
  3. Preheat the grill or oven to medium-high heat. Thread the marinated pork onto skewers and grill for about 5-7 minutes on each side until cooked through.
  4. Remove the pork from the skewers and chop into smaller pieces.
  5. Heat the corn tortillas and assemble the tacos with the chopped pork, diced pineapple, chopped onion, and fresh coriander.
  6. Serve the Tacos al Pastor hot and enjoy the delicious flavors!
