The Classic Irish Beef Stew

Irish Beef Stew is a hearty and comforting dish that has been a staple in Irish cuisine for centuries. Made with tender beef, root vegetables, and a rich and savory gravy, this stew is the perfect meal for a cozy night in or a festive St. Patrick's Day celebration.

The dish dates back to the early 19th century when the potato was introduced as a staple food in Ireland. The stew was a popular way to make a filling and nutritious meal using simple ingredients that were readily available.

Ingredients:

  • 750g stewing beef, cut into chunks
  • 2 tbsp olive oil
  • 2 onions, chopped
  • 2 cloves of garlic, minced
  • 3 large carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 4 large potatoes, peeled and cut into chunks
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the olive oil over medium-high heat. Add the beef chunks and brown on all sides. Remove the beef and set aside.
  2. Add the onions and garlic to the pot and sauté until softened.
  3. Return the beef to the pot and add the carrots, celery, potatoes, beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  4. Bring the stew to a boil, then reduce the heat to low and let it simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the vegetables are cooked through.
  5. Adjust the seasoning with salt and pepper if needed before serving. Enjoy your hearty Irish Beef Stew!
