Delicious Indonesian Nasi Goreng

Indonesian Nasi Goreng is a classic fried rice dish that is beloved for its rich flavor and versatility. It is a staple dish in Indonesian cuisine, often enjoyed for breakfast, lunch, or dinner. The dish typically consists of stir-fried rice with a combination of meat, seafood, or vegetables, seasoned with kecap manis (sweet soy sauce), shrimp paste, garlic, tamarind, and chili. Nasi Goreng is a great way to use up leftovers and create a satisfying meal that is bursting with flavor.

Ingredients:

  • 400g cooked jasmine rice, cooled
  • 200g chicken breast, diced
  • 3 eggs
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red chili, sliced
  • 2 tablespoons kecap manis (sweet soy sauce)
  • 1 tablespoon soy sauce
  • 1 teaspoon shrimp paste
  • 1 teaspoon tamarind paste
  • Salt and pepper to taste
  • Vegetable oil for cooking

Instructions:

  1. Heat some vegetable oil in a wok or large frying pan over medium heat. Add the diced chicken and cook until browned. Remove from the pan and set aside.
  2. Whisk the eggs in a bowl and scramble them in the same pan. Remove from the pan and set aside with the chicken.
  3. Add a bit more oil to the pan and sauté the onion, garlic, and chili until fragrant.
  4. Add the cooked rice to the pan and stir well to break up any clumps.
  5. Return the chicken and eggs to the pan, followed by the kecap manis, soy sauce, shrimp paste, tamarind paste, salt, and pepper. Stir fry until well combined and heated through.
  6. Serve hot with a side of prawn crackers and a sprinkle of fried shallots.
