Delicious Indonesian Nasi Goreng

Ingredients:
- 400g cooked jasmine rice, cooled
- 200g chicken breast, diced
- 3 eggs
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red chili, sliced
- 2 tablespoons kecap manis (sweet soy sauce)
- 1 tablespoon soy sauce
- 1 teaspoon shrimp paste
- 1 teaspoon tamarind paste
- Salt and pepper to taste
- Vegetable oil for cooking
Instructions:
- Heat some vegetable oil in a wok or large frying pan over medium heat. Add the diced chicken and cook until browned. Remove from the pan and set aside.
- Whisk the eggs in a bowl and scramble them in the same pan. Remove from the pan and set aside with the chicken.
- Add a bit more oil to the pan and sauté the onion, garlic, and chili until fragrant.
- Add the cooked rice to the pan and stir well to break up any clumps.
- Return the chicken and eggs to the pan, followed by the kecap manis, soy sauce, shrimp paste, tamarind paste, salt, and pepper. Stir fry until well combined and heated through.
- Serve hot with a side of prawn crackers and a sprinkle of fried shallots.
