The History of Filipino Adobo

Filipino Adobo is a traditional dish that dates back to the Spanish colonial era in the Philippines. The cooking method of stewing meat in vinegar, soy sauce, and spices was used as a way to preserve food without refrigeration. Over time, the dish evolved to include various proteins such as chicken, pork, or even seafood, each adding its unique flavor to the tangy and savory sauce.

Recipe

Ingredients:

  • 1 kg chicken pieces
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1 cup soy sauce
  • 1 cup vinegar
  • 1 cup water
  • 1 bay leaf
  • 1 tsp peppercorns
  • 3 tbsp cooking oil

Instructions:

  1. In a large bowl, marinate the chicken pieces in soy sauce and vinegar for at least 30 minutes.
  2. Heat oil in a pan and sauté the garlic and onion until fragrant.
  3. Add the marinated chicken pieces and cook until browned.
  4. Pour the marinade, water, bay leaf, and peppercorns into the pan.
  5. Simmer for 30-40 minutes or until the chicken is tender.
  6. Serve hot with steamed rice.
