Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 cups basmati rice
  • 2 onions, thinly sliced
  • 4 cloves of garlic, minced
  • 2 tomatoes, diced
  • 1 tablespoon baharat spice mix
  • 1 teaspoon turmeric powder
  • 1 cinnamon stick
  • 4 cardamom pods
  • 4 cloves
  • Salt and pepper to taste
  • Fried nuts and raisins for garnish

Instructions:

  1. In a large pot, sauté the sliced onions until golden brown. Remove half of the onions and set aside for garnish.
  2. Add the chicken pieces to the pot with the remaining onions and cook until the chicken is browned on all sides.
  3. Stir in the minced garlic, baharat spice mix, turmeric powder, and salt and pepper.
  4. Add the diced tomatoes, cinnamon stick, cardamom pods, and cloves. Pour enough water to cover the chicken and bring to a boil.
  5. Reduce the heat, cover the pot, and let the chicken simmer until tender.
  6. Remove the chicken pieces from the pot and set aside.
  7. Wash the basmati rice and add it to the pot with the remaining broth. Adjust the seasoning if needed.
  8. Place the chicken pieces on top of the rice, cover, and let it cook until the rice is tender and fluffy.
  9. Once done, fluff the rice with a fork, garnish with the reserved fried onions, nuts, and raisins.
  10. Serve the Bahraini Chicken Machboos hot with a side of yogurt or salad. Enjoy!
