Taiwanese Beef Noodle Soup

Today I'm sharing with you one of my all-time favorite comfort foods - Taiwanese Beef Noodle Soup. This hearty and flavorful soup has its roots in Taiwan and is a beloved dish that reflects the island's culinary prowess. The rich broth, tender beef, and chewy noodles come together to create a bowl of pure deliciousness.

Every spoonful of this Taiwanese Beef Noodle Soup is a taste of tradition and a warm hug for your taste buds. Perfect for a cozy night in or to impress your friends and family with a taste of Taiwanese cuisine!

Ingredients:

  • 500g beef brisket, cut into chunks
  • 2 shallots, sliced
  • 4 garlic cloves, minced
  • 1 thumb-sized piece of ginger, sliced
  • 2 star anise
  • 2 cinnamon sticks
  • 4-5 dried red chilies
  • 1 leek, chopped
  • 1 tomato, cut into wedges
  • 3 tbsp soy sauce
  • 2 tbsp rice wine
  • Salt and pepper to taste
  • 500ml beef broth
  • 300g wheat noodles
  • Fresh coriander and spring onions for garnish

Instructions:

  1. Heat some oil in a large pot and brown the beef brisket on all sides. Remove and set aside.
  2. In the same pot, sauté the shallots, garlic, and ginger until fragrant.
  3. Add the star anise, cinnamon sticks, dried red chilies, leek, and tomato. Cook for a few minutes.
  4. Return the beef to the pot. Add soy sauce, rice wine, salt, pepper, and beef broth. Bring to a boil, then reduce heat and simmer for 1.5-2 hours until the beef is tender.
  5. Cook the wheat noodles according to package instructions.
  6. To serve, place noodles in a bowl, top with beef and broth. Garnish with fresh coriander and spring onions.
