Today I'm sharing with you one of my all-time favorite comfort foods - Taiwanese Beef Noodle Soup. This hearty and flavorful soup has its roots in Taiwan and is a beloved dish that reflects the island's culinary prowess. The rich broth, tender beef, and chewy noodles come together to create a bowl of pure deliciousness.

Ingredients:
- 500g beef brisket, cut into chunks
- 2 shallots, sliced
- 4 garlic cloves, minced
- 1 thumb-sized piece of ginger, sliced
- 2 star anise
- 2 cinnamon sticks
- 4-5 dried red chilies
- 1 leek, chopped
- 1 tomato, cut into wedges
- 3 tbsp soy sauce
- 2 tbsp rice wine
- Salt and pepper to taste
- 500ml beef broth
- 300g wheat noodles
- Fresh coriander and spring onions for garnish
Instructions:
- Heat some oil in a large pot and brown the beef brisket on all sides. Remove and set aside.
- In the same pot, sauté the shallots, garlic, and ginger until fragrant.
- Add the star anise, cinnamon sticks, dried red chilies, leek, and tomato. Cook for a few minutes.
- Return the beef to the pot. Add soy sauce, rice wine, salt, pepper, and beef broth. Bring to a boil, then reduce heat and simmer for 1.5-2 hours until the beef is tender.
- Cook the wheat noodles according to package instructions.
- To serve, place noodles in a bowl, top with beef and broth. Garnish with fresh coriander and spring onions.
