Today I want to share with you a traditional Algerian dish that holds a special place in many hearts - Algerian Couscous. This beloved dish consists of delicate couscous grains served with a flavorful stew made with a variety of vegetables and tender meat.

Originating from North Africa, Algerian Couscous is a staple in Algerian cuisine and is often prepared for festive occasions and family gatherings. The dish is both hearty and comforting, making it a favorite among many.

Ingredients:

  • 500g couscous
  • 500g lamb, cubed
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 zucchinis, diced
  • 1 can chickpeas, drained
  • 3 tomatoes, chopped
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp cinnamon
  • Salt and pepper to taste

Instructions:

  1. Start by cooking the lamb in a large pot until browned. Add the onions and cook until softened.
  2. Stir in the carrots, zucchinis, chickpeas, and tomatoes. Season with cumin, paprika, cinnamon, salt, and pepper.
  3. Pour enough water to cover the ingredients and bring to a boil. Reduce heat and simmer for about 1 hour.
  4. Meanwhile, prepare the couscous according to package instructions.
  5. To serve, place the couscous on a platter and ladle the stew on top. Enjoy!
