This flavorful soup has a rich history as it is a symbol of freedom and independence for the Haitian people. Soup Joumou is traditionally served on New Year's Day to commemorate Haiti's independence from France.
This soup is a celebration of resilience and unity, as it was once forbidden for slaves to consume when Haiti was a French colony. After gaining independence, Haitians began enjoying this delicious soup as a way to honor their freedom. The soup is made with a variety of ingredients and spices, creating a complex and comforting flavor profile that is perfect for a hearty meal.
Ingredients:
  - 1 lb beef, cubed
 
  - 1 lb pumpkin, peeled and cubed
 
  - 1 lb carrots, peeled and sliced
 
  - 1 lb potatoes, peeled and cubed
 
  - 1 onion, chopped
 
  - 3 cloves of garlic, minced
 
  - 1 leek, sliced
 
  - 2 celery stalks, chopped
 
  - 1 scotch bonnet pepper, whole
 
  - 1 bouquet garni (thyme, parsley, bay leaf)
 
  - 1/4 cup lime juice
 
  - Salt and pepper to taste
 
Instructions:
  - In a large pot, brown the beef in some oil until seared on all sides. Add the onions and garlic, sauté until fragrant.
 
  - Add enough water to cover the beef and bring to a boil. Reduce heat and let it simmer for about an hour.
 
  - Add the pumpkin, carrots, potatoes, leek, celery, scotch bonnet pepper, and bouquet garni to the pot. Cook until vegetables are tender.
 
  - Once the vegetables are cooked, remove the scotch bonnet pepper and bouquet garni. Season with lime juice, salt, and pepper to taste.
