Indonesian Beef Rendang

Hey foodies! Today, I'm sharing a beloved Indonesian dish with you - Beef Rendang. Originating from the Minangkabau ethnic group of Indonesia, this flavorful and aromatic stew is traditionally cooked for hours until the beef is tender and infused with rich spices.

The key to a good Beef Rendang is patience and allowing the spices to fully develop, creating a dish that is deeply satisfying and full of complex flavors. This dish is perfect for a cozy family dinner or for impressing guests with a taste of Indonesian cuisine.

Ingredients:

  • 1 kg beef, cut into cubes
  • 400ml coconut milk
  • 5 kaffir lime leaves
  • 2 lemongrass stalks, bruised
  • 4 tbsp tamarind paste
  • 4 tbsp oil
  • Salt, to taste

Spice Paste:

  • 6 shallots
  • 4 cloves of garlic
  • 3 red chillies
  • 3 cm ginger
  • 3 cm galangal
  • 1 tbsp coriander seeds
  • 1 tsp cumin
  • 1/2 tsp turmeric

Instructions:

  1. Blend all the spice paste ingredients in a food processor until smooth.
  2. Heat oil in a pot, add the spice paste and cook until fragrant.
  3. Add the beef cubes and cook until browned.
  4. Pour in the coconut milk, add kaffir lime leaves, lemongrass, tamarind paste, and salt. Stir well.
  5. Cover and simmer on low heat for 2-3 hours, stirring occasionally until the beef is tender and the sauce is thick.
  6. Remove the lemongrass stalks and kaffir lime leaves before serving.
