Korean Japchae

Welcome to my kitchen, where today we are going to dive into the vibrant and flavorful world of Korean cuisine with a classic dish known as Japchae. Japchae is a popular Korean stir-fried noodle dish that is not only delicious but also visually appealing with its colorful mix of vegetables, meat, and glass noodles.

Originating from the Joseon Dynasty, Japchae was initially a royal court dish made with only vegetables and mushrooms. Over time, the dish evolved to include meat and sweet potato noodles, becoming the beloved Japchae we know today. Whether served as a side dish or a main course, Japchae offers a delightful combination of sweet and savory flavors that will leave you craving for more.

Ingredients:

  • 200g sweet potato glass noodles
  • 200g beef, thinly sliced
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 red bell pepper, julienned
  • 1 carrot, julienned
  • 4-5 shiitake mushrooms, sliced
  • 3-4 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions:

  1. Boil water in a large pot and cook the sweet potato glass noodles according to package instructions. Drain and rinse with cold water. Set aside.
  2. In a bowl, marinate the sliced beef with soy sauce, sugar, minced garlic, and pepper. Let it sit for about 10-15 minutes.
  3. Heat oil in a large pan over medium-high heat. Add the marinated beef and cook until browned. Remove from pan and set aside.
  4. In the same pan, stir-fry the onion, bell pepper, carrot, and mushrooms until softened.
  5. Add the cooked noodles and beef back into the pan. Drizzle with sesame oil and stir well to combine all the ingredients.
  6. Season with more soy sauce, sugar, salt, and pepper to taste. Stir-fry for another 2-3 minutes.
  7. Remove from heat and garnish with sesame seeds before serving.
