Ingredients:

  • 500g chicken breast, cooked and shredded
  • 2 cups chicken broth

  • 2-3 yellow chili peppers, seeded and deveined
  • 100g grated parmesan cheese
  • 4 boiled eggs, halved
  • 4 potatoes, boiled and sliced
  • Cooked rice, to serve
  • Salt and pepper, to taste

Instructions:

  1. In a blender, combine the yellow chili peppers, walnuts, and a splash of chicken broth. Blend until smooth.
  2. In a large pan, sauté the onion and garlic until softened. Add the blended chili pepper mixture and cook for a few minutes.
  3. Stir in the shredded chicken, parmesan cheese, and the rest of the chicken broth. Simmer until the sauce thickens.
  4. Pour in the evaporated milk and cook for another 5-10 minutes. Season with salt and pepper.
  5. Serve the Aji de Gallina over cooked rice, garnished with boiled eggs and sliced potatoes.
