Scottish Haggis

Oh, the wonderful and traditional Scottish Haggis! A dish that has been enjoyed for centuries in the beautiful land of Scotland. Haggis is a savory pudding containing sheep's pluck (heart, liver, and lungs), minced with onion, oatmeal, suet, spices, and salt, mixed with stock, and traditionally encased in the animal's stomach lining. This iconic dish is often enjoyed on Burns Night, celebrating the famous poet Robert Burns.

The blend of flavors and textures in Scottish Haggis creates a unique and delicious eating experience. Despite its unusual ingredients, haggis is a dish loved by many for its rich and hearty taste. It's often served with neeps and tatties (mashed turnips and potatoes) and a dram of whisky, making it a true taste of Scotland.

Ingredients:

  • 1 sheep's pluck (heart, liver, and lungs)
  • 1 onion, finely chopped
  • 250g steel-cut oats
  • 100g beef suet, grated
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp nutmeg
  • 1/2 tsp coriander

Instructions:

  1. Clean the pluck thoroughly and remove any excess fat.
  2. Finely chop the pluck and combine with the onion, oats, suet, and spices in a large bowl.
  3. Stuff the mixture into a cleaned sheep's stomach lining, making sure to press out any air pockets.
  4. Secure the ends with string and pierce the exterior a few times with a fork.
  5. Place the haggis in a pot, cover with water, and simmer gently for about 3 hours.
  6. Once cooked, remove the haggis from the pot, cut open the casing, and serve with neeps, tatties, and a dram of whisky.
