Each region of Uzbekistan has its own variation of Plov, but the essential elements remain the same - fragrant rice, tender meat, and aromatic spices. This dish is a true labor of love, as it requires patience and precision to achieve the perfect balance of flavors.

Ingredients:

  • 500g lamb, cubed
  • 2 cups long-grain rice
  • 3 large carrots, julienned
  • 1 large onion, thinly sliced
  • 1 head of garlic, cloves separated and peeled
  • 1/2 cup vegetable oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions:

  1. Heat vegetable oil in a large pot over medium heat. Add the lamb and brown on all sides.
  2. Add the onions and cook until soft and translucent.
  3. Stir in the carrots, garlic, and spices. Cook for another 5 minutes.
  4. Wash the rice until the water runs clear, then add it to the pot. Stir well to combine.
  5. Pour enough water to cover the rice by about 1 inch. Season with salt and pepper.
  6. Cover the pot with a lid and reduce the heat to low. Cook for 30-40 minutes until the rice is fluffy and the water is absorbed.
  7. Fluff the rice with a fork, mixing in the meat and vegetables. Serve hot and enjoy!
