Welsh Bara Brith

Welcome to my kitchen, where today we are taking a trip to Wales with the classic Welsh Bara Brith. Bara Brith, meaning 'speckled bread' in Welsh, is a traditional fruit loaf that is moist, slightly sticky, and packed full of flavor.

This beloved Welsh delicacy is often enjoyed sliced with a generous spread of butter alongside a nice cup of tea. The recipe has been passed down through generations, each family adding their twist to this timeless treat.

Ingredients:

  • 350g mixed dried fruit
  • 300ml hot black tea
  • 100g brown sugar
  • 1 egg, beaten
  • 275g self-raising flour
  • 1 tsp mixed spice

Instructions:

  1. Place the dried fruit in a bowl, add the hot tea, cover, and leave overnight to plump up.
  2. Preheat the oven to 160°C (325°F) and grease a loaf tin.
  3. Stir in the sugar and beaten egg into the fruit mixture.
  4. Sift the flour and mixed spice, then fold into the fruit mixture.
  5. Pour the mixture into the prepared tin and bake for about 1 1/2 hours.
  6. Allow the Bara Brith to cool in the tin before turning out onto a wire rack.
  7. Slice and serve with butter for a delightful Welsh treat!
