A Taste of Australia: Lamingtons

Originating in Australia, Lamingtons are delightful sponge cake squares coated in a layer of chocolate and desiccated coconut. These sweet treats are perfect for morning or afternoon tea, and they are loved by many across the globe.

The history of Lamingtons is quite interesting. It is believed that Lamingtons were named after Lord Lamington, who served as the Governor of Queensland from 1896 to 1901. The exact origins of this dessert are debated, but one thing is for sure – they are absolutely delicious!

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1/3 cup cornstarch
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup milk
  • 3 cups desiccated coconut
  • 400g dark chocolate, chopped
  • 2 tbsp butter

Instructions:

  1. Preheat the oven to 180°C and grease and line a 9x13 inch baking pan.
  2. In a bowl, sift together the flour, cornstarch, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool completely, then cut into squares.
  7. Melt the chocolate and butter in a heatproof bowl over a pan of simmering water. Dip each square of cake into the chocolate mixture, then roll in desiccated coconut.
  8. Place the Lamingtons on a wire rack to set before serving.
