Lebanese Tabouleh

Tabouleh is a traditional Middle Eastern salad that is popular in Lebanese cuisine. Ingredients:

  • 1 cup bulgur wheat

  • 1/3 cup extra virgin olive oil
  • 1/4 cup lemon juice

Instructions:

  1. In a bowl, soak the bulgur wheat in cold water for about 30 minutes. Once soaked, drain any excess water.
  2. In a large mixing bowl, combine the chopped parsley, mint, tomatoes, cucumber, and red onion.
  3. Add the soaked bulgur wheat to the bowl and mix well to combine all the ingredients.
  4. In a separate small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and pepper to make the dressing.
  5. Pour the dressing over the tabouleh salad and toss until everything is evenly coated.
  6. Adjust seasoning to taste and refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together.
