Omani Shuwa - A Traditional Omani Delicacy

Omani Shuwa is a traditional dish from Oman that is cooked underground. It is a celebratory dish often prepared during special occasions and festivals. The dish is made by marinating meat, usually lamb or goat, in a blend of Omani spices and then slow-cooked in an underground sand pit for several hours.

The slow cooking process imparts a unique flavor to the meat, making it incredibly tender and succulent. The Omani Shuwa is usually served with fragrant rice, traditional Omani bread, and a variety of side dishes.

Ingredients:

  • 2 kg lamb shoulder, bone-in
  • 4 cloves of garlic, minced
  • 2 tbsp Omani spice mix
  • Salt to taste
  • Banana leaves for wrapping

Instructions:

  1. In a bowl, mix the minced garlic, Omani spice mix, and salt to form a paste.
  2. Using a sharp knife, make deep incisions all over the lamb shoulder.
  3. Rub the spice paste all over the lamb, making sure to get it into the incisions.
  4. Wrap the marinated lamb in banana leaves, making sure it is sealed tightly.
  5. Dig a pit in the ground and light a fire in it to create hot coals.
  6. Place the wrapped lamb in the pit and cover it with sand to seal in the heat.
  7. Let the lamb cook in the pit for 6-8 hours.
  8. Once cooked, unwrap the lamb, shred the meat, and serve hot with rice and bread.
