Ecuadorian Ceviche

Originating from the coastal regions of Ecuador, ceviche is a popular and refreshing seafood dish that is perfect for warm weather. This dish typically consists of fresh raw fish marinated in citrus juices, such as lemon or lime, and mixed with various seasonings, vegetables, and herbs.

Each country in Latin America puts its own twist on ceviche, and in Ecuador, it's commonly served with plantain chips or popcorn on the side for a delightful crunch.

Ingredients:

  • 500g white fish fillets, cubed
  • 1 red onion, thinly sliced
  • 2 tomatoes, diced
  • 1 green pepper, finely chopped
  • 1/2 cup fresh coriander, chopped
  • 1 cup lime juice
  • 1 orange, juiced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine the fish, onion, tomatoes, green pepper, and coriander.
  2. Add the lime juice, orange juice, olive oil, salt, and pepper. Mix well to ensure the fish is coated in the citrus juices.
  3. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
