Greek Spanakopita

Hello foodies! Today I'm excited to share with you a classic Greek dish - Spanakopita. Spanakopita is a traditional Greek pastry filled with a delicious mixture of spinach, feta cheese, onions, and herbs, all encased in layers of crispy phyllo pastry.

This savory pie has a delightful blend of flavors and textures, making it a popular choice for gatherings and family meals in Greece. The name 'Spanakopita' is derived from the words 'spanaki' (spinach) and 'pita' (pie), highlighting the key ingredients of this dish.

Ingredients:

  • 500g fresh spinach, chopped
  • 200g feta cheese, crumbled
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • 1 pack of phyllo pastry sheets

Instructions:

  1. Preheat the oven to 180°C (350°F). Grease a baking dish with olive oil.
  2. In a large pan, sauté the onions and garlic in olive oil until softened.
  3. Add the chopped spinach to the pan and cook until wilted. Remove from heat and let it cool.
  4. In a bowl, mix together the spinach, feta cheese, dill, parsley, salt, and pepper.
  5. Layer 5 sheets of phyllo pastry in the baking dish, brushing each sheet with olive oil.
  6. Spread the spinach and feta mixture evenly over the phyllo sheets.
  7. Layer another 5 sheets of phyllo pastry on top, brushing each sheet with olive oil.
  8. Score the top layer of the pastry into squares or triangles, then bake in the preheated oven for 45-50 minutes or until golden and crispy.
  9. Allow the Spanakopita to cool slightly before slicing and serving. Enjoy this flavorful Greek pie with a side of tzatziki or a fresh Greek salad!
