Kenyan Nyama Choma

Dear foodies, today I am thrilled to share with you a traditional Kenyan dish that holds a special place in my heart - Nyama Choma. This popular East African delicacy is all about perfectly grilled or roasted meat marinated with aromatic spices. 'Nyama Choma' literally translates to 'grilled meat' in Swahili, the national language of Kenya. Ingredients:

  • 1 tsp salt
  • 1 tsp black pepper

  • 1 tbsp freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 tsp paprika

Instructions:

  1. In a bowl, mix salt, black pepper, vegetable oil, soy sauce, lemon juice, garlic, ginger, and paprika to create the marinade.
  2. Coat the meat chunks with the marinade, ensuring each piece is well covered. Allow the meat to marinate for at least 2 hours, or ideally overnight, in the refrigerator.
  3. Preheat your grill or barbecue over medium-high heat.
  4. Thread the marinated meat onto skewers and grill for about 8-10 minutes per side, or until cooked to your desired level of doneness. Baste with any remaining marinade while grilling.
  5. Once the meat is cooked, remove from the grill and let it rest for a few minutes before serving.
  6. Serve the Nyama Choma hot with your favorite side dishes like Ugali (maize meal) and Kachumbari (fresh tomato and onion salad).
