Swiss Fondue

Welcome to my kitchen, where today we are taking a trip to Switzerland with a classic dish – Swiss Fondue! This iconic melted cheese dish has its origins in the Alps and brings warmth and comfort to any gathering. The tradition of fondue dates back to the late 17th century when Swiss villagers melted cheese to make it more enjoyable during the winter months.

Swiss Fondue is a communal dish where everyone gathers around a pot of melted cheese, dipping in pieces of bread and other accompaniments. It's the perfect dish for a cozy night in with friends or family, especially during the colder months.

Ingredients:

  • 400g Gruyère cheese, grated
  • 400g Emmental cheese, grated
  • 1 garlic clove, halved
  • 1 1/2 cups dry white wine
  • 1 tbsp cornflour
  • 1 tbsp kirsch (cherry brandy)
  • Pinch of nutmeg
  • Salt and pepper to taste
  • Cubed bread, vegetables, or fruits for dipping

Instructions:

  1. Rub the garlic clove halves on the inside of a fondue pot.
  2. Combine the grated Gruyère and Emmental cheeses in the pot with the white wine over low heat.
  3. In a small bowl, mix the cornflour with the kirsch until smooth and add it to the cheese mixture.
  4. Stir continuously until the cheese is melted and the mixture is smooth.
  5. Season with nutmeg, salt, and pepper.
  6. Transfer the fondue pot to the table over a burner to keep it warm.
  7. Serve with cubed bread, vegetables, or fruits for dipping.
