Today, I'm excited to share with you a recipe close to my heart - Xiang-Style Spicy Chicken. Hailing from the Hunan province in China, this dish is known for its bold flavors and fiery kick. It perfectly balances the numbing heat of Sichuan peppercorns with the heat of dried chili peppers, creating a taste sensation that will leave you craving more.

Xiang-Style Spicy Chicken has a rich history, with roots in traditional Chinese cuisine. The dish showcases the use of aromatic spices and ingredients like ginger, garlic, and soy sauce, all coming together to create an unforgettable dining experience.

Ingredients:

  • 500g chicken breast, sliced
  • 3 tbsp soy sauce
  • 2 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 2 tsp Sichuan peppercorns
  • 5-6 dried red chili peppers
  • 3-4 cloves of garlic, minced
  • 1-inch ginger, sliced
  • 2 spring onions, chopped
  • 2 tbsp vegetable oil

Instructions:

  1. In a bowl, marinate the sliced chicken with soy sauce, Shaoxing wine, and sugar. Set aside for 15-20 minutes.
  2. Heat vegetable oil in a wok over high heat. Add Sichuan peppercorns, dried chili peppers, garlic, and ginger. Stir-fry until fragrant.
  3. Add the marinated chicken to the wok and stir-fry until cooked through.
  4. Garnish with chopped spring onions and serve hot with steamed rice.
